Get into the festive spirit with Welsh Lamb!

We may be restricted this Christmas in terms of the number of people we can cater for under one roof, but that shouldn’t deter us from enjoying some quality Welsh Lamb!  And what better way to celebrate Welsh Lamb than to give it some well-deserved status on the Christmas table.

A large joint of lamb makes a great alternative to turkey and due to its versatility, it can be enjoyed as leftovers. (But it’s so moreish, there is a chance you will finish it all in one sitting!)

This succulent leg joint of Welsh Lamb, roasted and basted in gin and cranberry juice and served with little stocking fillers of baked red onions stuffed with lamb sausage meat, makes the perfect seasonal feast.  Serve with roasted potatoes, seasonal vegetables and the cranberry, gin and meat juices.  Delicious.

What is better than a warming Welsh Lamb casserole served with creamy mashed potatoes on a cold winter’s day? (No, this is not a Christmas cracker joke…) A Christmas spiced Welsh Lamb casserole, of course!  This is a great winter warmer that can effortlessly pass as a stylish festive feast.  It’s suitable to cook in the oven or slow cooker, leaving you to get on with more important things like eating mince pies, opening presents…
