Caramelised Welsh Lamb chops and roasted veg traybake

Ingredients

For the traybake:

  • 4-6 PGI Welsh Lamb loin chops (or individual rumps)
  • 2 bunches of tomatoes on the vine
  • 1 bunch of tenderstem broccoli
  • 3 red onions, peeled and cut into wedges
  • Handful radishes, halved
  • 1 garlic bulb, halved
  • Sprigs of fresh thyme

For the marinade:

  • 3 tbsp Worcestershire sauce
  • 2 tbsp reduced salt soy sauce
  • 2 tbsp balsamic vinegar
  • 2 tbsp tomato sauce/ ketchup
  • 1 tbsp dark brown sugar
  • ½ tsp chilli flakes
  • 1 tsp dried mixed herbs
  • ¼ tsp black pepper
  • 2 tbsp olive oil

Method

  1. Preheat the oven to 200˚C / 180˚C Fan / Gas 6.
  2. In a large bowl, whisk all the marinade ingredients together then add the chops. Stir to ensure the chops are coated in the marinade. Leave for 30 minutes, if possible.
  3. Place the chops and vegetables in a tray, add the garlic and thyme and brush them with a little oil or the marinade.
  4. Place in the oven and cook for approximately 20 – 25 minutes until the chops are cooked to your liking (if cooking longer, remove the broccoli and tomatoes).
  5. Serving suggestion: boiled potatoes or wholegrain rice.
