Fun Welsh Beef mini kofta mummies and witches’ fingers

Ingredients

  • 450g lean PGI Welsh Beef mince
  • 1 onion, finely chopped, lightly fried in a little oil and cooled
  • 1 large carrot, peeled and grated
  • 1 tbsp mild curry paste (or ketchup)
  • 1 small egg, beaten (to bind if required)

To decorate the mummies

  • Pizza dough or pastry, cut into a few strips
  • Mozzarella or olives

To decorate the witches’ fingers

  • Whole blanched almonds or small pieces of vegetables e.g. peppers cut into a nail shape

Method

  1. Preheat the oven to 200°C / 180°C fan / Gas 6.
  2. Place the mince in a bowl and add the cooled onion, carrot and curry paste. Mix to combine and, if required, add a little bit of the egg to bind the mixture together.
  3. Shape the beef mixture into small sausage/kofta shapes (children may find it easier if they lightly wet their hands). Place on a baking tray.
  4. To make the fingers, press an almond or piece of vegetable into the top of the kofta.
  5. To make the mummies, lift the kofta in your hand and use a strip of dough or pastry and wrap around the kofta leaving room to add the eyes.
  6. To form the eyes, push small pieces of mozzarella or halved olives into the kofta.
  7. Cook for approximately 12-15 minutes until thoroughly cooked.
  8. The mini kofta mummies and witches’ fingers are great for dipping into ketchup or mayonnaise.
