Welsh Lamb Mach Wrap



Method

Delicious slow cooked, spiced, Welsh Lamb served with a herby yogurt dip, all wrapped up! The signature dish of Mach Comedy Festival 2016.

  1. Blitz all the ingredients for the marinade in a blender until you have a smooth paste.
  2. Make deep slits into the skin of the shoulder and run the paste into the lamb ensuring it’s coated all over.
  3. Place in a roasting tin and marinade for at least 4 hours, preferably overnight.
  4. Pre heat the oven to 200 oC/ Gas 5 and place the lamb uncovered into the oven for 30 minutes until browned slightly.
  5. Reduce the temperature to 180 oC/ Gas 3-4 then cover the lamb loosely with foil and cook for approx. 3 hours until the meat is tender and falls off the bone.
  6. To make the dip – just mix all the ingredients together.
  7. Using a fork or your hands shred some lamb off the bone, place onto the wrap with a dollop of the yogurt dip, wrap up and enjoy!

Ingredients

  • 1 shoulder of Welsh Lamb (on the bone)

Marinade

  • 1 onion roughly chopped
  • 4 garlic cloves, peeled
  • 1“ piece of root ginger, peeled and sliced
  • large handful of parsley and coriander
  • 1tbsp harissa paste
  • 2tbsp ground cumin
  • 2tbsp ground turmeric
  • 2tbsp smoked paprika
  • 2tbsp oil
  • juice and rind of 1 lemon and 1 orange
  • 1tbsp soft brown sugar
  • 1tsp sea salt
  • 1tsp ground black pepper.

For the 'herby' yoghurt:

  • 200g natural yogurt
  • handful finely chopped mint
  • handful finely chopped coriander
  • 1tbsp sweet chilli sauce
  • 1 lime, rind and squeeze of the juice
