Loaded Welsh Beef brisket fries

  • 100g leftover pulled PGI Welsh Beef brisket
  • 1 bag of frozen skin-on fries
  • ½ tsp cayenne pepper or chip seasoning
  • 4 spring onions, finely chopped
  • 150g grated cheese (cheddar or mozzarella or mix of both)
  • BBQ sauce or similar
  • Chives, finely chopped


  1. Spread the fries onto a large oven tray, sprinkle over the spice or seasoning and cook as instructed on the packet until crisp and golden.
  2. Remove the fries from the oven and top with the brisket and grated cheese and half of the spring onions. Return to the oven for approximately 5 minutes until the cheese is melted and the beef is hot.
  3. Top with the remaining spring onions, drizzle over the sauce and sprinkle with chives.
  4. Serve with a nice crisp green salad.

Tip: This is a great way of using up leftover cooked brisket.
