Hungry Healthy Happy’s Welsh Lamb shish kebab

  • Serves 4

Ingredients

  • 800g PGI Welsh Lamb leg, cut into 4cm chunks
  • 2 tbsp olive oil
  • 3 tbsp plain yogurt
  • 3 garlic cloves, crushed
  • ½ lemon, juice only
  • 2 bell peppers, cut into chunks
  • ½ tsp ground coriander
  • ½ tsp cumin
  • ½ tsp cayenne pepper
  • ½ tsp paprika
  • Pinch of sea salt and black pepper
  • 10g fresh parsley, chopped

Method

  1. Put all of the ingredients (except the bell peppers) into a bowl and mix well.
  2. Put the bowl in the fridge for at least an hour, but overnight if possible.
  3. Thread the marinated lamb and peppers onto the skewers.

Put under a grill on high for 15 minutes, turning once halfway through. Serve hot.
