Welsh Beef steak brunch bagel

Ingredients

  • 200g Welsh Beef rump steak
  • 2 tbsp oil
  • 2 seeded bagels
  • 2 cheese slices
  • 2 avocados
  • Pinch of chilli flakes
  • 2 tbsp lemon juice
  • Seasoning
  • Red onion, thinly sliced
  • Rocket leaves
  • 2 eggs

  1. In a small bowl mash the avocado, add the chili flakes, lemon juice and seasoning.
  2. Fry the onion in the oil until softened. Remove from the pan.
  3. Cook the steak in a hot pan, fry for a few minutes each side to your liking.
  4. Rest the steak.
  5. Toast the bagels.
  6. Assemble by placing the cheese slice on the bottom half of the toasted bagel, add the avocado mixture, rocket and onions, add the steak and top with a fried egg and the bagel top.
