Ingredients
- Approx 500g diced Welsh lamb
- Curry powder (I use Madras powder), divided
- Garam masala
- 1 tsp turmeric
- Salt and pepper
- Drizzle of olive oil
- 1 large white onion, chopped
- Garlic & ginger paste
- Can of tomatoes
- 1 beef stock cube dissolved in 300ml hot water along with a good squeeze of tomato purée

- Season the lamb with 1 tsp curry powder, 1 tsp garam masala, ½ tsp turmeric, salt, pepper and a drizzle of olive oil.
- Add the lamb to the slow cooker, followed by the chopped onion and 1 tablespoon of garlic & ginger paste.
- Add the remaining 1 heaped tsp curry powder, 1 heaped tsp garam masala and ½ tsp turmeric.
- Stir the tomato purée into the stock, then pour into the slow cooker along with the chopped tomatoes. Mix everything together well.
- Cook on HIGH for 4 hours. Serve with basmati rice, naan bread, fresh coriander and sliced chilli (if you like it hot!)
