Cajun Welsh Beef crispy tacos

Ingredients

  • 1x 250g Sirloin steak
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • Sprinkle black pepper
  • 1 small red onion, finely chopped
  • 2 tomatoes finely chopped
  • 6 cm piece cucumber finely cubed
  • Small handful coriander, chopped
  • 75g strong cheddar cheese, grated
  • Handful shredded lettuce
  • Small tub reduced fat crème fraiche or soured cream
  • Splash hot chilli sauce
  • Crispy Taco shells

Method

  1. In a small bowl, mix the oil with the cajun spice
  2. Place the steak in the mixture and leave for 10 minutes while you prepare the rest of the ingredients
  3. Heat the airfryer for 2 minutes on 200’C
  4. Pop the steaks in the basket and cook for 5 minutes, then turn and cook for a further 3 minutes (for Medium Rare). Allow to rest for 5 minutes and sprinkle with seasoning.
  5. While the steak is cooking mix together the onion, tomatoes, cucumber and coriander.
  6. Mix together the crème fraiche and hot chilli sauce.
  7. Place the steak on a chopping board and thinly slice.
  8. Load the tacos by putting some lettuce in the bottom, a little of the sauce, then the tomato mixture, cheese and top with the sliced steak and drizzle with the remaining sauce.
