Welsh Lamb, Mint and Onion Patties with Onion, Apple and Leek Relish


  1. To make the Onion, Apple and Leek Relish, add all the relish ingredients (Onion, apples, chilli sauce, vinegar, sugar and leeks) to a large pan. Cover the pan and cook on a reduced heat until the leeks are soft and the apples fluffy, approx 10-15 minutes. Meanwhile make the patties.
  2. In a bowl place lamb mince, mint jelly and onion. Season well and mix together thoroughly.
  3. Divide into 8 and shape into patties.
  4. Cook under a preheated grill for 8-12 minutes until cooked through.
  5. Remove relish from heat and serve either hot or cold. (Alternatively, if you are short on time buy a relish to serve with the patties). Serve patties with relish and griddled Welsh cakes.
  6. Serve on floured buns with salad.

  • 1 small red onion, finely chopped

Onion, Apple & Leek Relish:

  • 1 red onion, peeled and finely sliced
  • 75ml (5tbsp) soft dark brown sugar
  • 45ml (3tbsp) white wine vinegar
  • 1 leek, finely sliced
  • 1 large cooking apple, peeled, cored and chopped
  • 1 eating apple, cored and sliced
  • 5ml (1tsp) sweet chilli sauce
