Welsh Beef Steak with spinach and pepper salad, pancetta croutons with orange and dill dressing



Method

  1. Preheat the oven to gas mark 6, 200°C, 400°F
  2. Season beef steak liberally with black pepper. Cook on preheated griddle plate or grill for 4 minutes each side for medium cook. Meanwhile place spinach and peppers into a bowl and toss together.

  4. Make croutons: Slice baguette, place on baking tray and lay thinly sliced pancetta over the bread slices. Drizzle with a little oil. Place in oven for about 10 minutes until bread is lightly toasted and pancetta is nice and golden.
  5. Cut the steak into thick wedges and place on top of the spinach and toss together.
  6. Serve with pancetta croutons
