Spiced Welsh Beef Sirloin Steaks with Cranberry Drizzle and Green Salsa


  1. To make the salsa verde, place all the ingredients for the salsa in a small bowl, mix well together and allow to stand before serving.
  2. Preheat a large frying pan and cook the steaks. For preferences, see below: Rare – 2 minutes each side Medium – 4 minutes each side Well Done – 6 minutes each side
  3. During the last minute of cooking add the cranberry and port to the pan and allow to bubble. Add the butter and melt.
  4. Serve with mini roasted potatoes and a wintery salad.

  • 2tbsp port or masala wine
  • 25g (1oz) butter

Green Salsa:

  • 1 avocado pear, peeled and cut into small cubes
  • ΒΌ cucumber, cut into small cubes
  • 2 spring onions, finely sliced
  • 1 lime, juice and rind
  • 2tsp olive oil
  • Seasoning
  • 1tbsp fresh coriander, chopped
