
Ingredients
- 800g PGI Welsh Lamb leg, cut into 4cm chunks
- 2 tbsp olive oil
- 3 tbsp plain yogurt
- 3 garlic cloves, crushed
- ½ lemon, juice only
- 2 bell peppers, cut into chunks
- ½ tsp ground coriander
- ½ tsp cumin
- ½ tsp cayenne pepper
- ½ tsp paprika
- Pinch of sea salt and black pepper
- 10g fresh parsley, chopped

- Put all of the ingredients (except the bell peppers) into a bowl and mix well.
- Put the bowl in the fridge for at least an hour, but overnight if possible.
- Thread the marinated lamb and peppers onto the skewers.
