
Ingredients
- 1 Welsh beef sirloin steak
- 1 ciabatta
- Olive oil
- Knob of butter
- Salt and black pepper
- 100g chestnut mushrooms
- 1 onion
- 100ml single cream
- 1 tspn Dijon mustard
- 2 cloves garlic
- 1 bag of rocket
- Bunch of parsley
- Bunch of coriander
- 1 red chilli
- Sprinkle of oregano
- 1 tbspn red wine vinegar
- 1 tbspn mayo
- 1 tspn wholegrain mustard

- Pat the steak dry and add a little oil along with some salt and pepper
- Finely chop the parsley, coriander, chilli and one clove of garlic and add to a bowl with the red wine vinegar and a sprinkle of oregano. Combine with the rocket and set aside
- Finely slice the mushrooms and onion and add to a pan on a medium heat with a knob of butter and glug of olive oil. After 5 minutes add the garlic and Dijon mustard. After a further minute, add the cream and cook down to desired consistency
- Grill the steak to your liking and set aside to rest as you toast your ciabatta
- Mix the mayo and wholegrain mustard and spread onto the ciabatta
- Layer the steak, creamy mushrooms and herby rocket and top with the ciabatta lid
- Enjoy!
