Welsh Lamb leg steaks with chimichurri

Ingredients

  • 2 x boneless Welsh Lamb leg steaks  
  • 1 tbsp oil 
  • Pinch garlic powder 
  • Seasoning 
  • Pinch dried herbs 

 For the chimichurri: 

  • Small bunch of coriander 
  • Small bunch of flat-leaf parsley
  • 2 garlic cloves
  • 1 shallot
  • 1 red chilli deseeded
  • 5 tbsp extra virgin olive oil
  • 2 tbsp red or white wine vinegar

Method

  1. Drizzle the oil over the steaks, then sprinkle with the seasoning and herbs
  2. Preheat the air fryer to 200’c
  3. Place the steaks in the basket and cook for approximately 4-5 minutes each side depending how you like them cooked
  4. Leave to rest for 4 minutes, spooning over any juices
  5. For the chimichurri, place all ingredients in a small blender and blitz until finely chopped
  6. Serve and enjoy!
