Welsh Lamb fajitas

Ingredients

  • 1 tablespoon olive oil
  • 2 Welsh Lamb leg steaks, cut into thin strips
  • 1 red onion, thinly sliced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • Handful mushrooms
  • 1 tbsp Fajita Seasoning
  • Juice ½ lime
  • 8 small flour tortilla wraps, warmed
  • 4 tablespoons half fat crème fraiche or natural yogurt
  • 100 gram (4 ounce) cheddar cheese, grated
  • 2 chopped tomatoes
  • Handful chopped coriander
  • Dollop of guacamole

Method

  1. Place 1 tbsp oil in frying pan, add the lamb strips and fry for a few minutes until lightly brown
  2. Add the onion and peppers and mushrooms and fry over high heat for approx. 5 minutes until nicely coloured.
  3. Lower the heat and add the fajita seasoning, stir well and fry for 2 minutes and add the lime juice.
  4. Warm the tortillas in the oven or microwave
  5. Spoon the mixture onto a tortilla, top with crème fraiche, and cheese, tomatoes, coriander and dollop of guacamole
