Ingredients
- 1 tablespoon olive oil
- 2 Welsh Lamb leg steaks, cut into thin strips
- 1 red onion, thinly sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- Handful mushrooms
- 1 tbsp Fajita Seasoning
- Juice ½ lime
- 8 small flour tortilla wraps, warmed
- 4 tablespoons half fat crème fraiche or natural yogurt
- 100 gram (4 ounce) cheddar cheese, grated
- 2 chopped tomatoes
- Handful chopped coriander
- Dollop of guacamole
- Place 1 tbsp oil in frying pan, add the lamb strips and fry for a few minutes until lightly brown
- Add the onion and peppers and mushrooms and fry over high heat for approx. 5 minutes until nicely coloured.
- Lower the heat and add the fajita seasoning, stir well and fry for 2 minutes and add the lime juice.
- Warm the tortillas in the oven or microwave
- Spoon the mixture onto a tortilla, top with crème fraiche, and cheese, tomatoes, coriander and dollop of guacamole
