Miso Welsh Beef and Broccoli

Ingredients

  • 400g rump steak, cut into thin strips
  • Black pepper, coarse ground
  • 2 tbsp oil

For the coating sauce:

  • 3 tbsp reduced salt soy sauce
  • 150ml beef stock
  • 2 tbsp white miso paste
  • 2 tbsp honey
  • 2 tbsp red Thai curry paste
  • 1 tbsp sesame oil
  • 1 tbsp plain flour

To finish:

  • 160g tenderstem broccoli cut into pieces
  • 1 small onion, finely chopped
  • 4 spring onions, chopped
  • 1 tbsp fresh ginger chopped
  • 3 cloves garlic, finely chopped
  • Toasted sesame seeds

  1. Make the sauce by placing the ingredients in a bowl and whisk until smooth.
  2. Season the beef with black pepper.
  3. Heat the oil in a frying pan and over a high heat fry the beef strips for a few minutes until browned.
  4. Reduce the heat and add the ginger, garlic, onion, broccoli and spring onions, stir and cook for 4 minutes.
  5. Pour in the sauce, stir well and simmer for 5 minutes.
  6. Serve with rice and sprinkle with the toasted sesame seeds.
