Greek style Welsh Lamb cutlets

Ingredients

  • 8 Welsh Lamb cutlets (2 per person)

Marinade:

  • 2 tbsp olive oil
  • Juice ½ lemon
  • 3 garlic cloves, grated
  • 1 tsp dried oregano
  • 1 tbsp rosemary sprigs, chopped
  • 1 tbsp fresh thyme, chopped
  • Seasoning

  1. In a small bowl mix together the ingredients for the marinade, pour into a large freezer bag, add the cutlets and ensure they’re all coated in the marinade.
  2. Refrigerate for up to an hour.
  3. Remove from the fridge 20 minutes prior to cooking.
  4. The cutlets can be pan fried for 4 minutes each side or place under a hot grill for the same time.
  5. Serve with a Greek salad and a minted yogurt dip
