- Remove the rack from the fridge 20 minutes before cooking.
- Make the crumb by melting the butter in a pan, add the shallots and garlic, fry for 2 minutes to soften. Add the breadcrumbs, pistachio and parsley.
- Heat the air fryer to 180 degrees.
- Oil the rack of lamb and sprinkle with seasoning.
- Place in a hot pan to sear the meat, turning to sear all surfaces.
- Place the rack on a board, coat the surface with the mustard, then press the crumb onto the mustard.
- Place the rack into the air fryer and cook to your liking.
- If you like your lamb medium-rare cook for 15-18 minutes until the internal temperature is 57-63 degrees, 20-25 minutes for medium lamb, internal temperature 64-68 degrees. (Follow your air fryer guidelines).
- Allow to rest before carving.
- Delicious served with minted pea puree.
