Air Fried Rack of Lamb with Sourdough and Pistachio Crust

Ingredients

  • 1 French trimmed rack Welsh Lamb
  • 1 tbsp oil
  • Seasoning
  • 50g Butter
  • 2 shallots or 1 small onion, finely chopped
  • 2 cloves garlic, crushed
  • 75g Sourdough breadcrumbs
  • 50g pistachio nuts, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp Dijon mustard

  1. Remove the rack from the fridge 20 minutes before cooking.
  2. Make the crumb by melting the butter in a pan, add the shallots and garlic, fry for 2 minutes to soften. Add the breadcrumbs, pistachio and parsley.
  3. Heat the air fryer to 180 degrees.
  4. Oil the rack of lamb and sprinkle with seasoning.
  5. Place in a hot pan to sear the meat, turning to sear all surfaces.
  6. Place the rack on a board, coat the surface with the mustard, then press the crumb onto the mustard.
  7. Place the rack into the air fryer and cook to your liking.
  8. If you like your lamb medium-rare cook for 15-18 minutes until the internal temperature is 57-63 degrees, 20-25 minutes for medium lamb, internal temperature 64-68 degrees. (Follow your air fryer guidelines).
  9. Allow to rest before carving.
  10. Delicious served with minted pea puree.
