Flavoursome feasts with Welsh Lamb: Welsh Lamb Masterclass with Bab Haus

We’ve been on a culinary journey with six of Wales’ most talented chefs to create an array of incredible Welsh Lamb recipes that showcase its superior flavour, quality and its creative potential. We tasked each of the chefs – who all come from very different culinary backgrounds and cultures – to create indulgent Welsh Lamb recipes that would inspire home cooks to experiment with Welsh Lamb from the comfort of their own kitchens. The result? An exquisite, diverse collection of the very best (in our opinion!) Welsh Lamb dishes there is!

One of our favourite stops along our culinary journey was at Bab Haus’ street food kitchen in Newport Market and it was here that we met Chef-Owner, Leyli Homayoonfar. Cardiff-born Leyli grew up in an Iranian-Welsh household, where food centered much of her family life. Being surrounded by fantastic cooks and a wealth of different cuisines, with Persian meals being a staple in the household, Leyli’s love of cooking started from a very young age.

Having worked in professional kitchens in Cardiff and London for almost two decades – including high-end restaurants, Jamie Oliver’s cookery school and developing recipes for the likes of Waitrose and Borough Market, Leyli returned to Wales to take on the growing street food scene. Fast-forward to the present day, and Leyli’s Bab Haus brand now has sites all over south Wales, delivering fresh and modern twists to Tex-Mex classics that blur the line between restaurant dining and street food feasting.

For Leyli, using local product wherever possible is paramount, and she proudly supports Welsh Lamb and Welsh Beef in all her restaurants.

“I always use Welsh Lamb, in the restaurant or at home, simply because, in my opinion, it’s the best lamb in the world. The quality and the flavour you get is just exceptional.”

During our visit, Leyli treated us to not one, but two delicious Welsh Lamb dishes. Firstly, she re-created Bab Haus’ signature dish – Birria Tacos with a smoked Welsh Lamb shoulder. Bursting with flavour, this best-selling dish is a truly indulgent treat. We also got to sample one of Leyli’s favourite recipes – a Ghormeh Sabzi, the national dish of Iran. A fragrant and hearty Persian stew, this is a fantastic dish to enjoy with family and friends, allowing everyone to tuck in and experience the wonderful flavours of Welsh Lamb together.

From traditional Middle Eastern dishes to indulgent Tex-Mex feasts, Leyli took us on a world tour of flavours in just one afternoon – showcasing the wonderful versatility and exceptional quality of Welsh Lamb.
