- Remove the tops of the peppers and set aside (these will be used as lids for the lanterns). Remove the seeds and centres of the peppers. Using a sharp knife, carefully carve face shapes into the peppers.
- Make up some beef bolognese, or heat up leftover bolognese, add more vegetables into the mixture and the cooked rice.
- Carefully spoon the mixture into the peppers, adding some cheese in the middle. Finish with more cheese and pop the top (lid) back on the pepper.
- Place in the oven at 180°C / 160°C fan / Gas 5 for approximately 25 minutes until the filling is piping hot.

- 1 packet pre-cooked rice
- Additional vegetables (e.g. canned sweetcorn, chopped peppers, grated carrot)
- 75g grated cheese (mozzarella or cheddar)
