Welsh Lamb Chop Cassoulet



Method

  1. Preheat oven to Gas Mark 4, 180°C, 350°F.
  2. In a large pan heat oil and brown off the chops.
  3. Add the onion, garlic and sausages and continue to cook for 2-3 mins. Add the paprika and thoroughly coat all ingredients.
  4. Add the stock, tomatoes and beans - mix well, bring to the boil.
  5. Transfer to a deep dish, cover with foil or lid and cook in a preheated oven for about 1 hour until chops are cooked through.
  6. Serve with chunks of crusty bread and steamed seasonal green vegetables.

  • 1 Onion, roughly chopped
  • 2 Cloves garlic, crushed
  • 3 Welsh lamb spicy sausages
  • 1tbsp Smoked paprika
  • 150ml (¼ pt) Lamb stock
  • 400g approx Can chopped tomatoes
  • 400g approx Can Flageolet beans
