Welsh Beef Meatloaf, with piquant spiced sauce



Method

  1. In a large bowl thoroughly mix all the ingredients for the meatloaf, season.
  2. Line a greased 900g (2lb) loaf tin with pancetta slices. Place mixture into tin and press down well.
  3. Bake in a preheated oven for 40-45 minutes.
  4. Meanwhile dry fry the onion and garlic for 1-2 minutes, add cumin and the remaining sauce ingredients. Bring to the boil and simmer for 8-10 minutes.
  5. Serve the meatloaf, sliced with crusty bread and drizzled with sauce.

  • 25g (1oz) rolled oats
  • 1 courgette, grated
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 3tbsp tomato ketchup
  • 1tsp dried mixed herbs
  • Salt and black pepper
  • 8 thin slices pancetta or streaky bacon

Piquant Spiced Sauce:

  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1tsp cumin
  • 397g (14oz) can chopped tomatoes
  • 2tbsp tomato ketchup
  • 1tbsp mustard
  • Pinch of sugar
