Hungry Healthy Happy's Moroccan Welsh Lamb Skewers



Method

1) Add the lamb to a bowl and add the rest of the ingredients and mix well. Put in the fridge for 30 minutes.

2) Thread on to wooden skewers (soak for 30 minutes first so they don't burn).

3) Put under a medium heated grill for 15 minutes, turning half way through.

Ingredients

  • 500g diced lamb (fat trimmed off)
  • 1 red onion, cut in to chunks
  • 2tbsp olive oil
  • 1tbsp tomato puree
  • juice and zest of half a lemon
  • half a tsp each of paprika, cumin, tumeric, chilli powder, ground coriander, garlic powder
  • 2tbsp fresh mint, chopped
  • pinch of sea salt and black pepper
