Simple summer lunches with Welsh Lamb

Light lunches are a great idea in the summer, for keeping cool whilst staying healthy in the hot weather. But light dishes don’t have to be boring, and these recipes are packed full of flavour and crunch for a refreshing summer lunch. Quick and easy to cook, whip up these simple dishes for the perfect healthy snack.

With only a 10 minute cook time this healthy recipe is easy to put together in a hurry. For an extra fruity flavour, add in some smoothie and mango chutney as you fry the Welsh Lamb. Throw a lemongrass stalk into the mix to make it extra refreshing and serve up on a bed of fresh noodles.

Hot Welsh Lamb superfood salad

This rainbow coloured dish is packed full of superfoods making it an excellent healthy and light dish. Perfect for the summer months, mango and pomegranate make this recipe fresh and fruity. Toss together with strips of lean Welsh Lamb leg steaks to make sure your salad is anything but boring.

Sweet Chilli Welsh Lamb

Another super fast dish, you can have this simple recipe all served up in 10 minutes. Sugar snap peas add a great crunchy texture to the dish with lime juice adding that refreshing edge. With only 273 calories per serving, this recipe is light yet perfectly filling!

Harissa Welsh Lamb Koftas

These mini koftas are perfectly snack sized for anyone having lunch on the go. For those who like some heat, add a squeeze of harissa - a hot chilli pepper paste perfect for adding subtle spice. Make a delicious side salad with sundried tomato, oregano, feta cheese and fresh parsley, and serve with hot toasted pitta breads to complete the Greek dish.

We love this broad bean paste that perfectly compliments Welsh Lamb steak. Whizz up broad beans, rocket and seasoning, and then add some goats cheese to make it extra creamy. Serve with a squeeze of lime juice on a lightly toasted ciabatta for the perfect snack.
